The Global Journal of Meat Science and Technology (GJMST) is an international, peer-reviewed, open-access journal published by the Global Alliance for Scientific Studies (GASS). The journal focuses on original and applied research in meat science, muscle biology, and meat processing technologies, with emphasis on quality, safety, functionality, and sustainability of meat and meat-based systems.
The journal publishes high-quality research articles, reviews, and technical contributions covering meat chemistry, processing and preservation technologies, functional ingredients, restructured and hybrid meat products, food safety and microbiology, packaging, sensory science, and emerging innovations in alternative and sustainable protein systems.
